Quick Bite: Ooey Gooey Toffee Cake

I am not a huge fan of toffee. It’s too sticky, too sweet, and I prefer to keep it far away from my plate. However, on the recommendation of a couple of trusted friends, I tried the Ooey Gooey Toffee Cake at Liberty Tree Tavern in Magic Kingdom … And I am so glad I did!

Officially, old Ooey Gooey is a vanilla cake with toffee filling, covered in caramel sauce and candy pieces, then topped with vanilla ice cream. Unofficially, it’s a super decadent bomb, waiting to explode in your mouth. Delicious.

Liberty Tree Tavern is my favorite table service spot in the Magic Kingdom, and it’s a great lunchtime respite from the heat of the day. Next time you’re looking for a midday break, tuck into some lunch, top it off with this ooey gooey deliciousness and then take a spin on the The Liberty Belle while you digest. A perfect afternoon.

And for those of us who can’t sneak into the Kingdom for a quick lunch any time we want, Disney Food Report has posted the recipe so we can make it at home! (Hey, next time you fire up the oven, give me a call, will you?)
