Grilled Beef Skewer with Chimichurri Sauce and Boniato Purée

Grilled, skewered beef, smothered in an oily, garlicy sauce, served on a smooth, starchy mash.

It’s back! You can also try the beef empanada.
This was a huge hit! The chimichurri sauce was thick and oily, full of sharp, delicious garlic flavor. (I don’t know for sure, but I’d bet there are garlic scapes in the sauce.) The beef was tender and delicious, and the boniato was smooth and mild. Very yummy, and definitely something I am going to be enjoying during this year’s festival!
